Keeping it Global—Roots and Trends of Macanese Cooking

To adhere to the development direction of consolidating Macao as "a hub of exchange and co-operation where traditional Chinese culture prevails and other cultures flourish in harmony", the Cultural Affairs Bureau of the Macao SAR Government and the China National Publications Import & Export (Group) Corporation have jointly organized the 2nd Encounter in Macao—Arts and Cultural Festival between China and Portuguese-speaking Countries: Macao International Book Fair 2019. During the book fair, an array of events, including talks delivered by writers, book launches, seminars on China–PSC publishing culture and cookbook publisher salons, will be held to promote in-depth cooperation regarding copyright trading and publishing among Portuguese-speaking countries, countries along the "Belt and Road" route and China, with the ultimate goals to invigorate the book publishing market and stimulate cultural development in Macao. Content: It is in a simple way that we characterize the so-called Macanese gastronomy as a fusion between the traditional Portuguese and Chinese food. It might be, though in a long slow pace. We can't forget the other roots, other tastes and flavors from so many places scattered around the world. A multitude of ingredients and culinary techniques that crossed the oceans, created and still recreate this creole blend, so fascinating and complex, which is Macanese food.
